This recipe is a dairy-free, agave sweetened, gourmet flavored, homemade ice cream. This flavor, called “Hippie Chip,” is made with Goji berries, cacao nibs, and Brazil nuts. You’ll need to borrow an ice cream maker if you don’t have one, but once you taste this sweet treat, you might want to invest in your own.
Yield: approx 2 quarts
4 cans unsweetened coconut milk (Light is not recommended)
1 vanilla bean (split and scraped)
1 tsp salt
3/4 - 1c agave
1/3-1/2 c dried Goji Berries
1/2 c raw cacao nibs
2/3 c raw Brazil Nuts cut into pieces
Heat coconut milk, agave, salt, and vanilla bean until just boiling. Remove from heat and chill at least 24 hours. Churn according to your ice cream freezer directions. Add nuts, berries, and cacao during the last 5 minutes of the churning process.
