Beets are known to cleanse the liver and intestinal tract. Very early on, Yogi Bhajan gave us his well-known Beet and Carrot Casserole recipe to help clear our systems of chemical toxins and drugs.
When I lived in Seattle, we had an amazing vegetable garden. One of the things we grew was beets.
I don’t especially like the taste of beets, but I learned long ago that they really like me—they soothe my digestion, strengthen my elimination, and boost my energy. They give me so many gifts every time I eat them. I eat beets at least twice a week, usually more.
I came up with this recipe so I could like beets as much as they like me.
I always have some cooked rice and steamed beets on hand, so I can run home for lunch and put this tasty, healthy meal together quickly. Then I go back to work feeling more calm, cozy, clear, and grounded.
1-2 medium organic beets, steamed, peeled, and grated or chopped
½ - 1 cup cooked organic basmati rice (white or brown)
Handful of chopped organic cilantro (or parsley)
Bit of crumbled goat cheese
Smattering of finely chopped red onion
Squirt of olive oil
Sea salt and black pepper to taste
1 – 2 tsp fresh squeezed lemon juice
1 clove minced garlic (optional)
The amounts are approximate. Heat the rice and beets on the stove or in the microwave. Then add the rest of the ingredients and enjoy.
